#1 Hara Bhara Kebab

Simplicity at its best. Very easy to make, and very hard to go wrong here ‘coz who doesn’t like Hara Bhara Kebabs’. Mashed potatoes, ginger-garlic paste, garam masala, boiled-mashed green veggies like spinach, peas, beans, salt, pepper and besan to hold it together. Coat it in semolina or panko bread crumbs. Deep fry or shallow fry. Serve with tangy tamarind chutney and he/she will fall head over heels for you.

#2 Fresh Bruschetta

Delicate flavours, no cooking required, refreshing and dead simple. All you need is some fresh diced tomatoes, minced garlic, diced red onion, olive oil, lots of salt and pepper, and fresh Italian basil. Brush a piece of french bread with olive oil, toast, top with some bruschetta and drizzle balsamic glaze all over. Delizioso! Perfect for Valentine’s dinner date!

#3 Patatas Bravas

This for those who love fried potatoes and some heat! (Sounds like everybody’s favourite). Dust potato wedges with maida, paprika, garlic powder and onion powder, deep fry, sprinkle smoked paprika and chopped parsley and drizzle spicy aioli all over. For meat eaters, toss in some pieces of spicy chorizo for an added zing.

#4 Grilled Shrimp

Seafood lovers alert. Bring home fresh, black tiger, jumbo prawns. Marinate in minced garlic, salt, black pepper, red chili powder, chopped cilantro and lemon juice. Throw on a hot grill or a cast iron pan with oil. Takes around 5 minutes to cook. Another marinade idea would be minced garlic, soy sauce, green chilies minced, and sesame oil. Once cooked, toss them in very little hoi-sin sauce and garnish with green onions!

#5 Meatballs

Firm yet juicy and spicy meatballs form a perfect appy for meat eaters. All you need is your choice of ground meat- lamb, mutton, pork or beef, add cumin powder, coriander powder, minced garlic, fresh herbs like rosemary, thyme, toasted fennel seeds, red chili powder, egg and some breadcrumbs. Mix well, roll out little balls and cook them in the oven at 400F for 5 minutes, then at 350F for 10-12 min. Check for the doneness before serving (if you want this relationship to last long LOL)

This is my take on Ice Cream Cookie Sandwich. So simple to put together and can be made ahead of time. For the best experience, use warm jalebis. It’s magical. Go for a Kesar-Pista or Tender Coconut or Fig ice cream.

#4 Mango Pulp or Aam Rass

It’s almost the season, so why not! Turn it onto home churned kulfi or serve it with Puri. Undefeatable!
