Tea-time Snacks

Being mommies makes us do so many things that we might never have done before having a kid. I generally never walk up to strangers, introduce myself and chat up to them. But, when my daughter’s school started, I realized there were other moms in our society sending their kids to the same school. Surprising myself, I found myself walking to them, and talking to them about anything and everything under the sun, while waiting for the school bus.

There is something about spending daily 10 minutes of your time (mostly in your night shirts), with a group of ladies, that makes best friends of you. This is precisely what happened with us as well. We have become a very close knit circle, and regularly meet up to have some fun time together, while the kids are still away at school. Of course, when friends come over, the most important item is food! And between the five of us, we have come up with some kick-ass recipes to brighten up even the dullest of days! Check them out!

Tea time snacks

Dry Samosas

Ingredients:

For the dough:

½ cup maida

Salt to taste

1 tbsp oil

For the filling:

1 cup finely chopped onions

2 tsp oil

cumin seeds

salt to taste

1 tsp chilli powder

½ tsp garam masala

½ tsp amchur powder

1 tbsp besan

pinch of haldi

2 tbsp coriander powder

 

Other ingredients

Oil for deep-frying

 

Method:

For the dough:

Knead a stiff dough using all the ingredients and enough water. Keep aside.

 

For the filling:

  1. Heat oil in the pan. Add cumin seeds.
  2. When the seeds crackle, add onions and salt. Sauté it for couple of minutes.
  3. Remove from the flame and add the spices along with besan. Keep aside.

 

Next Procedure

  1. Knead the dough till smooth and divide it into small portions
  2. Roll out each portion into oval shapes.
  3. Now cut the oval shape horizontally.
  4. Now take one portion, join the edges to make a cone and seal it with water.
  5. Fill it with the stuffing and apply little water to seal it.
  6. Repeat with other portions as well.
  7. Heat oil in deep non-stick kadhai and fry samosas on medium flame till they turn golden brown from all sides.
  8. Serve hot with ketchup or green chutney.

Dhokla Sushi with bell-peppers

¾ cup idli batter

Yellow and green capsicum strips

1 tsp oil

1 tbsp curd

½ tsp fruit salt

Salt to taste

Oil for brushing

 

Cheese-red garlic chutney

3 tsp cheese spread

3 tsp red garlic chutney

 

Black sesame coconut mixture

2 tsp black sesame seeds

4 tsp freshly grated coconut

 

Wasabi Mayo

3 tbsp curd

2 tsp Mayo

½ tsp wasabi sauce

Method:

  1. Combine idli batter, oil, curd, fruit salt and salt in a bowl and mix well.
  2. Pour 1/3 of the mixture on an oil greased thali and spread well.
  3. Place the thali in a steamer and steam it till done, almost for 3-4 minutes.
  4. Make one more dhokla thali in the similar way.
  5. Let it cool slightly and with help of thin ladle, remove it and keep aside.
  6. Now, place a cling film on dry, flat surface. Brush it with little oil. Sprinkle with half the black sesame-coconut mixture over it.
  7. Place one sheet of dhokla and then spread cheese-red-garlic chutney evenly on it.
  8. Place yellow and green capsicum strips and then roll the cling film tightly so as to roll the dhokla sheet. Cut this dhokla sushi into pieces with a sharp knife.
  9. Serve this with wasabi Mayo.
